Weekend Recipe: Beer-Braised Beef and Onions

Ingredients {recipe via}

  • 3 pounds onions
  • 1 (5-pound) boneless beef chuck roast, tied
  • 2 tablespoons vegetable oil, divided
  • 2 Turkish bay leaves or 1 California
  • 2 (12-ounces) bottles pilsner-style beer such as Budweiser
  • 2 tablespoons red-wine vinegar

Halve onions lengthwise, then slice lengthwise 1/4 inch thick.
Pat beef dry and season all over with 2 1/2 teaspoons salt and 1 teaspoon pepper. Heat 1 tablespoon oil in a wide 5-to 6-quart heavy pot over medium-high heat until it shimmers. Brown beef on all sides, about 15 minutes, then transfer to a plate.
Cook onions with bay leaves and 1/2 teaspoon salt in remaining tablespoon oil in pot, scraping up brown bits from bottom and stirring occasionally, until onions are well browned, about 25 minutes.
Meanwhile, preheat oven to 350°F with rack in middle. Cut a round of parchment paper the diameter of the inside of pot (near the top). Set parchment round aside.
Add beer and vinegar to onions and bring to a boil, stirring and scraping up brown bits. Add beef and meat juices from plate and return to a boil.
Cover with parchment round and lid and braise in oven until meat is very tender when pierced in several places with a meat fork, about 3 1/2 hours.
Transfer beef to a cutting board and let stand, loosely covered, 20 minutes. Cut off string, then slice meat. Skim off fat from sauce and discard bay leaves. Reheat if necessary.
Serve braised beef with onions and sauce.

Friday Fashion: Kimono Jacket

Nicole Richie always looks super stylish and vintage boho chic. I adore the fact that her style is all her own and she has turned it into a successful fashion business.

I probably never would have looked at a kimono as anything I could wear out in public- I always saw it as more of an indoor robe kinda thing- but when I saw  Nicole wear it so stylishly- it made me think that I just might have to have one...

A Princess Story

Let's face it, everyone loves a good princess story- in fact- I don't think I have ever met a girl who hasn't wished (at least once) to be a princess. I am however, getting a bit bored with all of the news coverage leading up to The Big Wedding Day (unless you have been living in a box, you know which one!).

I just want to scream out "Ok! get on with it already!"

In case you have not already planned your very own "English Tea Party -Viewing"...here is another way to "celebrate" the day...

Guest Post: The Cardigan Junkie

Hello!  I’m Haley from Cardigan Junkie and am so excited that Cara let me stop by today.  I’m a huge fan of her style, and want to compliment it by doing a bit of what I enjoy, which is showing how versatile one thing in your closet can be.

Since summer is almost here, I decided to start with one of my favorite new pieces – the navy batik skirt from Gap.

Summer Brunch Date

The most obvious way to wear this skirt would be with a casual top and sandals in the summer. I don’t believe matching is necessary, but a white tank would tone the look down a bit.

Working Girl

Unless everyone in the office wears business attire, a casual skirt with a blazer and fun accessories will be perfectly appropriate as long as the skirt isn’t too short.

First Date

And finally, the same skirt and tank can go on a date by adding an elaborate necklace and some additional accessories. I like how this look is easy to pull together and looks pretty effortless.

Hopefully this exercise helps some of you to see all the potential hanging in your closet. I know I had fun putting it together! What piece do you plan to wear the most this summer?
