I love love love chilean sea bass! It's a mild, buttery tasting fish, that is really hard to mess up cooking. I buy them in the frozen section of the supermarket; where the come vacuum packed in separate filets. When I am ready to cook them, I defrost them is a bowl of cool water for an hour. When they are defrosted, they come out just as good, if not better than fresh store bought fish!
Set oven to broil. Season with salt and pepper on both sides and drizzle on some extra virgin olive oil. Place in a heated cast iron skillet and broil for about 3 minutes per side. That's it! It comes out delicious!
*lately I have been pairing it with fresh tomato and basil that I saute with some salt, pepper and olive oil.
